As in life, the magic of this salad is in its balance and contrast. Healthy and artistic, this salad melts in your mouth with a crunch + a burst. Bright red with two shades of green, and a bit of white. A perfect complement to the rich flavors of your holiday meal. And a crowd pleaser. Peace and Joy Holiday Salad Recipe: 2 bunches of celery chopped small to medium size 1 pomegranate 1 bunch of cilantro chopped 1 large, soft plain goat cheese or 2 small logs Juice of 1 or 2 limes Sprinkling of salt Drizzling of olive oil Preparation: 1. Chop small to mid-sized pieces of 2-3 bunches of celery and place in a big bowl. 2. Chop the cilantro and add it to the bowl. 3. Add an entire pomegranate to the bowl by peeling a portion of your ripe pomegranate, breaking a large piece off, and adding individual kernels to the celery & cilantro. Shopping for pomegranates is an intuitive skill that my 9 year old niece has down, but I'm still learning. The best pomegranates are very red on the outside, and you can feel the juice in your hand when you hold it. "Heavy" is what these sites say. 4. Add the chilled goat cheese, squeeze the juice of 2-3 limes into the salad, sprinkle with salt, drizzle with olive oil, and mix to taste. Voila! Enjoy!
